Maple Glazed Salmon with Pomegranate

SALMON WITH MAPLE GLAZE AND POMEGRANATE by Amanda Cordony

This absolutely beautiful maple glazed salmon dish is a brilliant, light Summer meal that is sure to be a hit on any dinner table this season. This recipe comes to us from The Cordony Kitchen.

  • 350g salmon fillets, cut in half, skinless, boneless
  • 2 tablespoons of olive oil
  • 60g butter, salted
  • 2 tablespoons maple syrup
  • 2 tablespoons Berbere spice (Berbere is a Middle Eastern spice. Can use Harissa spice)
  • 1/2 pomegranate, seeds removed
  • Mint leaves to garnish
  1. Season the salmon fillets with salt & pepper.
  2. Add 2 tablespoons of olive oil to a low casserole pan. Bring the heat up to medium and once the pan is warm, add the seasoned salmon fillets to the pan. Sear on one side for 5 minutes and flip to sear for another 2 minutes before removing from the pan. Set aside.
  3. Add butter to brown for 1-2 minutes using the same pan at a low temperature. Add the maple syrup and the berbere spice for 30 seconds. Stir to combine.
  4. Return the salmon fillets to the pan and spoon over the mixture for another minute.
  5. Take off the heat. Serve fillets with maple glaze on top, and sprinkle pomegranate seeds and mint leaves to serve.
