Maple Glazed Salmon with Pomegranate

This absolutely beautiful maple glazed salmon dish is a brilliant, light Summer meal that is sure to be a hit on any dinner table this season. This recipe comes to us from The Cordony Kitchen.
- 350g salmon fillets, cut in half, skinless, boneless
- 2 tablespoons of olive oil
- 60g butter, salted
- 2 tablespoons maple syrup
- 2 tablespoons Berbere spice (Berbere is a Middle Eastern spice. Can use Harissa spice)
- 1/2 pomegranate, seeds removed
- Mint leaves to garnish
- Season the salmon fillets with salt & pepper.
- Add 2 tablespoons of olive oil to a low casserole pan. Bring the heat up to medium and once the pan is warm, add the seasoned salmon fillets to the pan. Sear on one side for 5 minutes and flip to sear for another 2 minutes before removing from the pan. Set aside.
- Add butter to brown for 1-2 minutes using the same pan at a low temperature. Add the maple syrup and the berbere spice for 30 seconds. Stir to combine.
- Return the salmon fillets to the pan and spoon over the mixture for another minute.
- Take off the heat. Serve fillets with maple glaze on top, and sprinkle pomegranate seeds and mint leaves to serve.
