A delightful blend of cherries and apples topped with a crunchy coconut crumble, then baked to golden perfection. A family favourite, irresistible comfort dessert. This delightful recipe is courtesy of Chef Jeff Simonetta.

Fruit Filling
  • 3 cups cherries, pitted
  • 3 cups apples, peeled and diced
  • 1/2 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
Coconut Crumble Topping
  • 1 cup all-purpose flour
  • 1/2 cup desiccated coconut
  • 1/2 cup brown sugar, packed
  • 1/2 cup unsalted butter, chilled and diced
  • 1/4 teaspoon salt
  1. Preheat the oven to 190°C (375°F). Grease 6 ramekins, and place on a baking tray.
  2. In a large saucepan, combine cherries, apples, sugar, flour, vanilla extract, and ground cinnamon.
  3. Place over a medium heat and stir until the fruits are evenly coated and start to soften.
  4. Transfer the mixture evenly to the prepared ramekins.
  5. In another bowl, mix flour, desiccated coconut, brown sugar, and salt.
  6. Add chilled diced butter and use your fingers to combine until crumbly.
  7. Sprinkle the coconut crumble mixture evenly over the fruit filling.
  8. Bake in the preheated oven for 15-20 minutes or until the top is golden brown, and the filling is bubbly.
  9. Allow the crumble to cool slightly before serving. Enjoy warm, optionally with a scoop of vanilla ice cream.
