Cherry and Apple Crumble

A delightful blend of cherries and apples topped with a crunchy coconut crumble, then baked to golden perfection. A family favourite, irresistible comfort dessert. This delightful recipe is courtesy of Chef Jeff Simonetta.
Fruit Filling
- 3 cups cherries, pitted
- 3 cups apples, peeled and diced
- 1/2 cup granulated sugar
- 2 tablespoons all-purpose flour
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1 cup all-purpose flour
- 1/2 cup desiccated coconut
- 1/2 cup brown sugar, packed
- 1/2 cup unsalted butter, chilled and diced
- 1/4 teaspoon salt
- Preheat the oven to 190°C (375°F). Grease 6 ramekins, and place on a baking tray.
- In a large saucepan, combine cherries, apples, sugar, flour, vanilla extract, and ground cinnamon.
- Place over a medium heat and stir until the fruits are evenly coated and start to soften.
- Transfer the mixture evenly to the prepared ramekins.
- In another bowl, mix flour, desiccated coconut, brown sugar, and salt.
- Add chilled diced butter and use your fingers to combine until crumbly.
- Sprinkle the coconut crumble mixture evenly over the fruit filling.
- Bake in the preheated oven for 15-20 minutes or until the top is golden brown, and the filling is bubbly.
- Allow the crumble to cool slightly before serving. Enjoy warm, optionally with a scoop of vanilla ice cream.
