Chargrilled King Prawns with Garlic Butter


24 green large king prawns
150ml olive oil
Salt and pepper
Garlic Butter

250gm good quality salted butter (diced)
80gm garlic peeled (10-14 cloves)
1 golden shallots, roughly choped
1/2 bunch parsley

  1. Place the peeled garlic cloves in a pot of cold water and bring to boil, then place in a colander and refresh in ice water, set aside.
  2. Finely chop the parsley and set aside
  3. Place the butter, shallot and garlic in a food processor and blend until smooth
  4. Place the garlic butter mix in a bowl and add in the parsley
  5. Wrap the butter in glad wrap and refrigerate until needed.
  6. Pre-heat your grill pan to medium/high
  7. Remove the head of each prawn and carefully butterfly straight from down the back with a sharp paring knife.
  8. Drizzle the prawns with olive oil, salt & pepper before placing shell side down onto the grill. Cook for a minute or until slightly charred then flip and continue cooking for another minute.
  9. Heat garlic butter in a separate pan and when foaming pour over the prawns then serve
